This slow cooked Beef Stroganoff is a classic family favourite that is perfect any time of the year! Slow cooked for tender, flavoursome beef; this is also a great budget meal!

Beef Stroganoff is one of those hearty comfort foods that just seems to soothe the soul. And it’s so much better cooked in a slow cooker! It’s easy, it’s creamy and full of flavour and the best part is you can put it on before you go to work and come home to a delicious dinner!

What Makes This Version Better?

There are a few main differences between this slow cooked Beef Stroganoff and the classic stovetop version.

  • It’s made with cheaper cuts of meat rather than higher quality, more expensive cuts which makes it a great budget meal for families!
  • Allowing the sauce to slow cook gives it much deeper and tastier flavours, which means one delicious dinner!
  • The beef is so tender that the meat literally just falls apart in your mouth! I mean, you can break it apart with a spoon.

Can I Substitute Chuck Steak for a Different cut?

You can absolutely use any type of stewing cuts of beef! Here are a few suggestions…

  • Beef Cheeks
  • Blade Steak
  • Beef Brisket

Sometimes you may even be able to buy packs of diced beef labeled ‘Stewing Steak’ or ‘Casserole Beef’ which comes in handy as it’s pre-diced.

Equipment

  • Slow Cooker

Ingredients
  

  • 500g chuck steak diced in 1.5" pieces
  • 1 onion sliced
  • 2 cloves garlic diced
  • 500ml beef stock
  • 1 tsp wholegrain mustard
  • tsp paprika
  • 2 tbsp worcestershire sauce
  • 2 tbsp cornflour
  • 1 tbsp water
  • salt & pepper to taste
  • 5 mushrooms sliced
  • 150ml sour cream

Instructions
 

  • Add steak, onion, garlic, stock, mustard, paprika and worcestershire sauce to a slow cooker and season to taste with salt and pepper.
  • In a small bowl, whisk together cornflour and water thoroughly to combine into a paste and add to slow cooker. Stir to combine
  • Cover and cook on low heat for 6 hours. Remove lid and bring to the boil, uncovered. Add mushrooms. Allow to boil until most of the liquid has reduced.
  • Add sour cream and turn slow cooker off. Stir to combine and check for seasoning. Serve with mashed potato, pasta or rice.

Notes

If your slow cooker doesn’t have a “Saute” setting that allows it to boil, then simply transfer to a large sauce pan!
