I know that salad often gets a bad rap for being ‘bland’ or unsatisfying but I think a good salad can be such a delicious and healthy (or not so healthy) summer meal.
And this Sweet Chilli Chicken Salad is the perfect kind of salad to convert you! This chicken salad is loaded with all kinds of good stuff from avocado and mango to grilled chicken, crispy bacon bits and feta cheese. It’s sure to be a hit!

This loaded chicken salad is packed full of delicious ingredients! It’s sure to keep you satisfied.
Fresh Ingredients – the base of the salad is made up of cos lettuce, avocado, mango (yes, mango goes is salad!) and cherry tomatoes. These are the fresh ingredients that give this salad a lighter flavour.
Hearty Ingredients – these ingredients are what really make this salad shine. Crispy bacon bits, grilled chicken and crumbled feta cheese are what add the great flavour and texture to the salad.
Dressing Ingredients – the easy salad dressing is made up of lime juice, olive oil, garlic and salt. It really ties everything together.

Sweet Chilli Chicken Salad
Ingredients
- 2 large chicken breasts
- ¼ cup sweet chilli sauce
- salt & pepper to taste
- 1 tbsp oil
- 2 rashers shortcut bacon finely diced
- 1 head baby cos lettuce
- 1 mango diced
- 1 avocado diced
- 8-10 cherry tomatoes quartered
- ¼ cup crumbled feta cheese
For the Dressing
- 1 lime juiced
- 1 tsp minced garlic
- 1 tbsp olive oil
- pinch of salt
Instructions
- Slice each chicken breast into four lenthways and add to a large bowl along with sweet chilli sauce, salt & pepper. Stir to combine and allow to marinate for 1-2 hours if possible.
- Bring a large frying pan up to medium-high heat and add oil. Grill chicken on each side until browned and fully cooked through. Slice the chicken into 1" pieces and set aside. Add diced bacon to frying pan and cook until crispy. Set aside.
- Meanwhile, roughly chop lettuce and add to a large bowl along with mango, avocado and tomatoes. Add chicken, bacon and feta.
- For the dressing, add all ingredients to a small bowl and swirl around to combine. Pour over salad and toss thoroughly to evenly coat. Divide between four bowls and serve immediately.
