Fried Scones is one of those classic Australian recipes that make you feel good. For me, having fried scones means it’s raining. That’s our tradition. When it rains, Pop makes fried scones and we eat them slathered in golden syrup. Yum. He really does make the best fried scones. Though to be fair, I don’t think I’ve ever eaten anyone else’s.

Every time I’ve asked him for the recipe he says there is no recipe. You just mix and fry.

Eventually I was able to get him to write it out in a little book I write all my family recipes in. The exact recipe is as follows

As you can see, it’s probably not the easiest recipe to remake. But luckily I’ve been able to rewrite it with a little more detail.

Fried Scones

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes
Course Morning Tea, Snack
Cuisine Australian
Servings 8 scones

Ingredients
  

  • 2 cups self-raising flour plus extra if needed
  • cups water plus extra if needed
  • 1 cup oil for frying
  • golden syrup to serve

Instructions
 

  • Combine flour and water in a large bowl. Knead together until dough is formed, adding more water if mixture is too dry or more flour if too sticky
  • Dust bench with extra flour and press out to 2cm thickness. cut into rough squares
  • Meanwhile, heat oil in a large frying pan on high heat. Shallow fry dough squares on each side until golden. Remove from oil and serve immediately with golden syrup
