December is just around the corner and with that, Christmas! In Australia, that usually means a Christmas Lunch full of delicious and fresh food, including some delicious seafood and mouthwatering salads. Where I live, it’s usually 40°c and no one is in any hurry to be lining up for a steaming plate of boiling hot baked potatoes or roast veggies. No, we eat salad at Christmas. Cold, fresh salads.
I know our family has a habit of sticking to the same ones time and time again. There’s nothing wrong with that, it’s just sometimes people want different. People want exciting! But often, when planning your Christmas Feast it’s hard to come up with new and exciting ideas to make salads that really impress your family and friends.
Well, fear not! This Apple, Rocket & Pine Nut Salad ticks all the boxes for the festive day! It’s the perfect accompaniment to both the traditional glazed ham and roast pork or chicken, and of course the seafood 😉

Apple, Rocket & Pine Nut Salad
For the Salad
2 cups Rocket Leaves
2 tbsp Pine Nuts
50g shaved Parmesan Cheese
For the Dressing
1 1/2 tbsp Balsamic Vinegar
1 tsp Dijon Mustard
1/3 tsp Minced Garlic
- Place a frying pan on medium heat and gently toast pine nuts, being very careful to keep an eye on them.
- Meanwhile, slice the apple and add to salad bowl along with rocket and shaved parmesan. Once finished toasting, add pins nuts.
- To make the dressing, combine all indeed in a jar or small container with a lid and shake until we’ll combined.
- Drizzle the dressing over the salad and toss until evenly coated. Serve.
