Apple, Rocket & Pine Nut Salad

Ingredients
  

For the Salad
  • 2 tbsp pine nuts
  • 1 green apple
  • 2 cups rocket leaves
  • 50g shaved parmesan cheese
For the Dressing
  • 3 tbsp olive oil
  • tbsp balsamic vinegar
  • 1 tsp dijon mustard
  • tsp minced garlic

Method
 

  1. Place a frying pan on medium heat and gently toast pine nuts, being very careful to keep an eye on them.
  2. Meanwhile, slice the apple and add to a salad bowl along with rocket and shaved parmesan. Once finished toasting, add pins nuts.
  3. To make the dressing, combine all indeed in a jar or small container with a lid and shake until we’ll combined.
  4. Drizzle the dressing over the salad and toss until evenly coated. Serve.
