This easy banana bread is a simple and cheap sweet treat that you can have any time of the day! Serve it warm with some butter for a nice morning tea or have it with ice cream for a tasty dessert that won’t break the bank!

This year, one of my main resolutions is to cook more from scratch. I want to make things that I’ve never made before, and I want to make things that I would normally just buy. Because as we all know, nothing tastes as good as homemade.
So this week, I made banana bread – mainly because my bananas were looking a little worse for wear…

And that’s the great thing about banana bread, isn’t it? It can turn that bunch of bananas that were destined for the bin, wasted produce that is both money and food down the drain, into something delicious. And that’s what cooking from scratch is really about. Thinking about what you have and what you don’t have and making something great from it.
Anyway, you’ve heard me ramble on just about enough for one post, but before we get to the recipe I’ll share a couple more great ideas with you…

Ingredients
Method
- Preheat oven to 180℃ and line a 11x21cm loaf tin with baking paper. Set aside.
- In a large bowl, mash bananas with a fork until smooth. Mix in egg, vanilla and butter.
- Add remaining ingredients and stir to combine into a smooth batter. Pour into prepared loaf tin and top with banana, cinnamon and brown sugar.
- Bake for 45-60 mins or until skewer comes out clean. Serve warm.
