Banana Bread

Ingredients
  

  • 3 extra ripe bananas
  • 1 egg beaten
  • 1 tsp vanilla essence
  • 80g salted butter melted
  • ¾ cup brown sugar
  • cups plain flour
  • ½ tsp bi-carb soda
  • pinch of salt
For the Toppings
  • 1 banana halved lengthways
  • ½ tsp cinnamon
  • 1 tbsp brown sugar

Method
 

  1. Preheat oven to 180℃ and line a 11x21cm loaf tin with baking paper. Set aside.
  2. In a large bowl, mash bananas with a fork until smooth. Mix in egg, vanilla and butter.
  3. Add remaining ingredients and stir to combine into a smooth batter. Pour into prepared loaf tin and top with banana, cinnamon and brown sugar.
  4. Bake for 45-60 mins or until skewer comes out clean. Serve warm.
