Oysters Kilpatrick is a simple and delicious Australian dish and my favourite way to eat oysters! Fresh shucked oysters served in the shell and topped with bacon bits and Kilpatrick sauce!
Living in a small rural town, fresh seafood is few and far between but luckily every now and then a seafood lorry comes to town. This week I was able to get some fresh oysters from Jetts Seafood and Oysters Kilpatrick was the first thing on my mind!
How to Make Oysters Kilpatrick
There are only three small basic steps to a simple Oysters Kilpatrick recipe
Step One – fry bacon until slightly crispy
Step Two – mix together tomato sauce (ketchup), worcestershire, and tabasco to make the sauce
Step Three – top fresh, shucked oysters with sauce and bacon bits and cook

Ingredients
Method
- Heat oil in a frying pan over medium heat and cook bacon until it starts to crisp and brown slightly. Remove from pan and set aside. In a small bowl, stir together worcestershire sauce, tomato sauce and tabasco
- Spread rock salt out over a baking tray or dish and gently nestle oysters in the salt to keep them level. Alternatively, you can use a layer of scrunched up foil
- Line air fryer tray or basket with a sheet of scrunched up foil. Nestle oysters into foil to keep them level
- Evenly spoon sauce over oysters and top with bacon bits. Cook in oven or air fryer at 200℃ for 5-8 mins or until sauce is bubbling. Serve oysters on a plate of rock salt with lemon.
