9 oysters kilpatrick on a bed of rock salt served with a wedge of lemon

Oysters Kilpatrick

Ingredients
  

  • 1 tbsp oil
  • 2 rashers shortcut bacon finely diced
  • 2 tbsp worcestershire sauce
  • 2 tbsp tomato sauce ketchup
  • 3 drops tabasco sauce
  • 12 oysters shucked and in half shell
  • rock salt to cook and serve
  • lemon to serve (optional)

Method
 

  1. Heat oil in a frying pan over medium heat and cook bacon until it starts to crisp and brown slightly. Remove from pan and set aside. In a small bowl, stir together worcestershire sauce, tomato sauce and tabasco
For Oven
  1. Spread rock salt out over a baking tray or dish and gently nestle oysters in the salt to keep them level. Alternatively, you can use a layer of scrunched up foil
For Air Fryer
  1. Line air fryer tray or basket with a sheet of scrunched up foil. Nestle oysters into foil to keep them level
Continue for Both Methods
  1. Evenly spoon sauce over oysters and top with bacon bits. Cook in oven or air fryer at 200℃ for 5-8 mins or until sauce is bubbling. Serve oysters on a plate of rock salt with lemon.
