If you’re looking for an easy, comforting and saucy weeknight dinner then this Sausage & Potato Hotpot might be just what you’re looking for! And did I mention that it’s a great budget meal?!

Ingredients

This Sausage Hotpot is made with cheap and common ingredients that most people would already have on hand, which makes this recipe a great last minute budget dinner!

Sausages – I use beef sausages for this dish, but you can use any kind of sausage that you enjoy!

Onion, Garlic & Tomato – These are what give the gravy its great flavour!

Gravy Powder – Look, I could sit here and tell you that you need to make everything yourself and that you must make the gravy from scratch. Every. Damn. Time. But you don’t. You just don’t. You’re busy, I’m busy. Cheat a little. It’s fine.

Potatoes – The potatoes for the hotpot are boiled until *just* cooked through and then sliced up. Lay them on top for a delicious topping!

Toppings – Just before baking, I scatter over garlic salt (if you don’t have this, get some! It’s delicious!) and grated cheese. Yum.

How do I Make this Hotpot?

A sausage hotpot is an easy and simple dish to make with only a few steps.

Step 1.  Brown the sausages in a pan until almost cooked through. Remove from pan and sauté onion, garlic and tomatoes. Remove from pan and set aside.

Step 2. Combine gravy powder and water and stir together. Add to pan and whisk until thickened. Add sausages and veggies and stir to coat.

Step 3.  Layer over par boiled potato slices and scatter over garlic salt and cheese. Bake for 30-45 minutes. Serve.

Ingredients
  

  • 2 large potatoes peeled
  • 1 tbsp oil
  • 8 beef sausages
  • 1 onion sliced
  • 1 tomato diced
  • 2 cloves garlic finely diced
  • 3 tbsp gravy powder
  • 500ml boiling water
  • ½ tsp garlic salt
  • cup grated cheese

Instructions
 

  • In a large saucepan on high heat, boil potatoes until just tender, but not falling apart. Remove from pan and allow to cool. Gently slice and set aside.
  • Meanwhile, heat oil in a large ovenproof frying pan on medium-high heat. Add sausages and cook, turning as needed, until browned and almost cooked through. Remove from pan. Add onion, tomato and garlic and cook until onions are tender. Remove from pan and set aside.
  • Stir together gravy powder and water in a jug until thoroughly combined and pour into pan. Allow to simmer gently and cook, stirring regularly, until thickened; about 5 mins.
  • Add sausages and onions back to the pan and gently layer over sliced potatoes. Season with garlic salt and top with cheese. Bake for 35-40 mins or until cheese is golden.
