I love loaded baked potatoes. So today, I’m sharing my favourite way to make them! These Savoury Mince & Coleslaw Potatoes are such a delicious and satisfying meal! And if you’ve never had a mince and coleslaw potato, then you definitely need to try this recipe.
Toppings
Now I will admit, the ingredient list for this recipe is a little longer than my usual recipes…BUT that doesn’t mean that it isn’t easy and cheap to make (because it definitely is!). There are four main elements to these savoury mince potatoes…
The Potatoes – the main part of a loaded jacket potato is, well; the potatoes. Just rub them with a little oil and season them with salt and pepper.
The Mince – Savoury Mince is one of those delicious Australian meals that everyone seems to have a different take on. For this one, I’ve kept it simple with just a few sauces, seasonings and of course, some onion and garlic.
The Coleslaw – a bit of red cabbage, carrot and capsicum make up this delicious topping! drowned in an easy homemade coleslaw dressing, this is sure to be a winner!
The Finishing Touches – to finish off this amazing meal, I like to melt the cheese over the mince, add coleslaw and then top with sour cream! Yum!
Helpful Tips & FAQS
Should I Wrap the Potatoes in Foil?
For this recipe, you do not need to wrap the potatoes in foil. We want the skin to crisp up and that will only happen if it’s not wrapped!
Should I Microwave the Potatoes Before Cooking?
You don’t need to microwave them, but if you want to make the cooking process a little more efficient, microwave the potatoes for 5-10 minutes after piercing with a fork a few times. Then rub with oil and season.
Can I Cook This Recipe in the Air Fryer?
Absolutely! This recipe provides instructions and cooking times for both the oven and air fryer!
Can I Use a Store-Bought Coleslaw Dressing?
The coleslaw dressing in this recipe is very easy to whip up in less than a minute, but you can use a store-bought option if you have one you really like.

Savoury Beef & Coleslaw Potatoes
Ingredients
- 4 medium russet potatoes
- 2 tbsp oil
- salt & pepper to taste
For the Mince
- 1 tbsp oil
- ½ onion diced
- 1 clove garlic finely diced
- 500g beef mince
- 2 tbsp worcestershire sauce
- 1 tbsp gravy powder
- 3 tbsp tomato sauce
- 300ml beef stock
For the Coleslaw
- 1 cup red cabbage thinly sliced
- 1 small carrot grated
- ¼ cup diced capsicum
- ¼ cup mayonnaise
- ½ tsp dijon mustard
- ⅓ tsp honey
- 1 tsp chives diced
To Serve
- ¼ cup grated cheese
- ¼ cup sour cream
Instructions
- Wash potatoes clean and, using a fork, stab 5-6 holes in each potato. Drizzle with oil and season with salt and pepper. Place in either an air fryer or oven and cook for 55-60 mins or until fork-tender.
- Meanwhile, heat oil in a large frying pan and sauté onion until tender. Add garlic and mince. Cook, stirring with a wooden spoon to break up mince, for 6 to 8 minutes or until browned. Add worcestershire sauce, gravy powder, tomato sauce and stock and stir to combine. Allow to simmer until reduced, about 10-15 mins.
- For the coleslaw, add cabbage, carrot and capsicum to a bowl. In a separate small bowl, add mayonnaise, mustard, honey and chives and stir to combine. Pour over cabbage mixture and toss to coat evenly.
- To serve, slice open each potato and top with mince and cheese then return to air fryer or oven for 5 mins or until cheese is golden. Remove from fryer and top with coleslaw and sour cream. Serve
