Greek Chicken Skewers

Ingredients
  

For the Marinade
  • ½ cup lemon juice
  • 3 cloves garlic finely diced
  • 2 tbsp honey
  • 2 tsp fresh parsley finely chopped (see notes)
  • 1 tsp fresh thyme finely chopped (see notes)
  • 3 tbsp olive oil plus extra for grilling
  • salt & pepper to taste
For the Skewers
  • 4 chicken thighs cut into 1 ½ inch pieces
  • 1 red capsicum cut into 1 ½ inch peices
  • ½ red onion cut into 1 ½ inch pieces
  • wooden skewers soaked in water for 30 minutes

Method
 

  1. For the marinade, combine all ingredients in a small bowl and stir to combine. Set aside.
  2. Thread chicken onto skewers, alternating with capsicum and onion. Repeat until you run out of ingredients.
  3. Add skewers to a large container with a secure lid and pour over marinade, tossing to coat evenly. Place in the frdge to marinate for 2 hours, tossing every hour.
  4. Grill skewers for 3-4 minutes on each side or unitl chicken is cooked through.

Notes

  1. If you can't find fresh herbs then simply substitute with a 1/3 tsp dried parsley and 2/3 tsp dried thyme.
  2. If you're really in a rush to get dinner on, you can reduce the marinading time. Just keep in mind that the longer you can marinade them, the better they with taste!
