Creamy French Baked Eggs (Oeufs en Cocotte)

Ingredients
  

  • 2 slices leg ham roughly chopped
  • ¾ cup cream
  • 4 eggs
  • salt & pepper to taste
  • tsp cayenne pepper
  • ¼ cup grated cheese
  • fresh parsley to serve (optional)
  • 4 slices toasted baguette

Method
 

  1. Preheat oven to 200°C.
  2. Divide ham between four ramekins. Add cream, reserving 4 tbsp for later use.
  3. Crack an egg into each ramekin and season with salt, pepper and cayenne pepper. Add a tbsp of cream on top of each egg and add grated cheese.
  4. Bake for 15-20 minutes or until eggs are cooked to your liking. Serve with parsley and toasted baguette.

Notes

You can also add two eggs to each ramekin if desired.
