Beetroot & Pistachio Dip

Ingredients
  

  • 125 g cream cheese
  • ½ cup diced feta cheese plus extra to serve
  • 250 g cooked, peeled beetroot
  • 1 clove garlic
  • ¼ lemon juiced
  • 1 tbsp olive oil
  • salt, to taste
  • 5 pistachio nuts shelled and crushed

Method
 

  1. Add cream cheese, feta, beetroot, garlic, lemon and oil to a food proccesso and blitz until smooth.
  2. Season to taste with salt and spoon into a serving bowl. Sprinkle with crumbled feta and pistachio nuts.
