Banana & Cinnamon Muffins with a Crunchy Oat Topping

Ingredients
  

For the Muffins
  • cup self-raising flour
  • ½ tsp cinnamon
  • 3 small overripe bananas (450g)
  • 1 cup milk
  • 60 g butter melted
  • ¾ cup brown sugar
For the Topping
  • ½ cup oats
  • 1 tbsp honey
  • ½ tsp cinnamon

Method
 

  1. Preheat oven to 180°C and grease a 12 hole muffin tin. Set aside.
  2. Combine flour and cinnamon in a large bowl. Add mashed bananas, milk, butter and sugar and stir until well combined. Divide mixture between muffin tin.
  3. For the crunchy oat topping, combine oats, honey and cinnamon in a small bowl.
  4. Divide oat mixture evenly amongst the muffin tin and bake for 20 minutes or until skewers come out clean.
  5. Enjoy as they are or serve them warm with a drizzle of maple syrup and ice cream.

Notes

For nice tall muffins, make sure to fill your cases right to the top!
