Instructions
Bring a pot of water to the boil and rice. Cook according to packet instructions. Drain and set aside.
Meanwhile, heat half the oil in a large frying pan and add chicken. Season with salt, pepper, and garlic salt. Cook until browned and golden. Turn over and season other side of the chicken and continue to cook until golden on both sides and cooked through.
Cut the bok choy in half lengthwise and place cut side down in the frying pan. Season with salt and cook on both sides until golden and tender. Adding a tbsp of water helps it to almost steam whilst cooking. Remove both the chicken and bok choy from pan.
While the chicken and bok choy is cooking, add remaining oil to a small saucepan on medium heat. Add peanut butter, soy sauce, chilli, lime juice and milk and stil to combine. Add the water spoon by spoon, stirring to incorporate after each until the sauce is at desired consistency. Set aside.
Divide rice, bok choy and chicken between two bowls. Spoon satay sauce over each piece of chicken and sprinkle over crushed peanuts. Serve and enjoy!
