Beef Burrito Bowl

Ingredients
  

For the Beef

  • 2 tsp ground cumin
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp ground chilli powder
  • ¼ tsp paprika
  • tsp cayenne pepper
  • 1 tbsp oil
  • 500 g beef mince
  • cup water
  • salt & pepper to taste

For the Salsa

  • 1 tomato diced
  • 1 x 130 g tinned corn kernals drained
  • red onion diced
  • ½ lime juiced
  • salt, to taste

For the Guacamole

  • 1 avocado
  • ½ lime juiced
  • salt & pepper to taste

To Serve

  • 2 cups cooked white rice
  • sour cream
  • grated cheese

Instructions
 

  • Combine spices in a small bowl and set aside. In a large frying pan on medium heat, add oil and mince, breaking up big chunks until small. Cook until browned and add spice mix along with water and allow to simmer until the liquid has reduced. Season to taste with salt and pepper.
  • Meanwhile, add all the salsa ingredients to bowl and stir to combine. Set aside. For the guacamole, add avocado and lime juice to a bowl and mash with a fork until desired consistency. Season to taste with salt and pepper and set aside.
  • To serve, divide meat and rice evenly between four bowls and top with salsa, guacamole, sour cream and cheese.
