This prawn salad is a great recipe to have on hand for when you want something delicious and fresh, yet don’t want to go to too much effort.
And it’s so easy to make! All you need to do is lightly grill the prawns in some garlic and lime and cut up some fresh mango and avocado. Then add everything to a big bowl with the salad greens and toss through the zesty lime dressing.

Prawn, Mango & Avocado Salad
Ingredients
For the Dressing
- 1 lime juiced
- 1 tbsp olive oil
- 2 tbsp capsicum finely diced
- 1 tbsp chives finely chopped
For the Prawns
- 1 tbsp oil
- 3 tbsp butter
- 2 cloves garlic finely diced
- 1 lime juiced
- 1 kg cooked king prawns peeled
To Serve
- 2 cups mixed salad greens
- 2 mangoes sliced
- 1 avocado diced
Instructions
- For the dressing, add lime juice, olive oil, capsicum and chives in a small bowl and swirl to combine. Set aside.
- For the prawns, add oil and butter to a large frying pan on high heat. Once butter has melted, add garlic and lime juice. Add the prawns and toss, making sure they are all evenly covered in butter. Remove from frying pan and set aside.
- To make the salad, place salad greens, mango, avocado and prawns to a large bowl and pour over dressing. Toss thoroughly to combine and serve.
