Method
- Place a large frying pan on medium heat. Slice zucchini into rounds and drizzle with oil. Season with salt and pepper on each side. Add to frying pan.
- Grill zucchini until golden brown on both sides then remove from pan and place on a serving platter.
- Drizzle zucchini with lemon juice and scatter over pine nuts and crumbled feta. Serve warm.
