Tomato & Mixed Bean Soup

Ingredients
  

  • 1 onion roughly chopped
  • 2 cloves garlic finely diced
  • 1 tbsp oil
  • 400g tin crushed tomatoes
  • 420g tin five bean mix
  • 300ml chicken or vegetable stock
  • 1 small sprig fresh oregano or ¼ tsp dried
  • ½ tsp ground nutmeg
  • ½ tsp garlic salt
  • salt & pepper to taste

Method
 

  1. Gently sauté onion and garlic in a medium-sized saucepan along with oil on medium heat until onions are soft and fragrant.
  2. Add tomatoes, beans, and stock and stir to combine. Add remaining ingredients, stir and bring to a gentle simmer.
  3. Cover saucepan with a lid and allow to cook for 30-40 minutes, stirring occasionally. Remove from heat and serve.
