Sour Cream & Chives Twice Baked Potatoes

Ingredients
  

For the Spuds
  • 4 medium potatoes
  • 1 tbsp oil
  • salt & pepper to taste
  • 1 tbsp butter
  • ½ tsp onion powder
  • ¼ cup parmesan cheese
To Serve
  • ¼ cup sour cream
  • 1 tbsp fresh chives finely chopped

Method
 

  1. Preheat oven to 200°C. Thoroughly wash potatoes and pierce with a fork in several places. drizzle with oil and season with salt and pepper. Place on a baking tray and bake for 45-50 minutes or until you can easily pierce the potatoes with a fork.
  2. Carefully remove potatoes from oven and scoop out the insides, leaving a 1cm edge, and place in a small bowl.
  3. Add butter and onion powder and season to taste with salt and pepper. Roughly mash with a fork until well incorporated.
  4. Spoon mixture bake into potato skins and top with parmesan cheese. Return to the oven for 5-10 minutes or until cheese has melted.
  5. Remove from oven and top with sour cream and chives.

Notes

Feel free to mix and match extra toppings as well...Crispy bacon bits are a great addition!
