Potato & Sausage Breakfast Hash

Ingredients
  

  • 2 medium-sized potatoes washed and peeled
  • ½ red onion peeled
  • green capsicum
  • 2 beef sausages
  • 1 clove garlic
  • 1 tbsp oil
  • 1 tsp smoked paprika
  • 2 tbsp worcestershire sauce
  • salt & pepper to taste
  • 200ml beef stock

Method
 

  1. Dice potatoes, onion, capsicum, and sausages into ¾ pieces. Finely dice garlic.
  2. Heat oil in a large frying pan over medium heat and add vegetables and sausage. Cook, stirring occasionally, until meat has browned off and onions are tender.
  3. Add paprika, worcestershire sauce and season to taste with salt and pepper. Stir to combine and allow to cook for 2-3 minutes before adding stock. Turn the heat up to high and allow to simmer until the liquid has reduced and the vegetables begin to fry and crisp up.
  4. Once potatoes are tender, remove from heat and serve.

Notes

You can add almost any vegetables or meats you like to the hash and an egg on top makes a great addition too!
