Method
- Dice potatoes, onion, capsicum, and sausages into ¾ pieces. Finely dice garlic.
- Heat oil in a large frying pan over medium heat and add vegetables and sausage. Cook, stirring occasionally, until meat has browned off and onions are tender.
- Add paprika, worcestershire sauce and season to taste with salt and pepper. Stir to combine and allow to cook for 2-3 minutes before adding stock. Turn the heat up to high and allow to simmer until the liquid has reduced and the vegetables begin to fry and crisp up.
- Once potatoes are tender, remove from heat and serve.
Notes
You can add almost any vegetables or meats you like to the hash and an egg on top makes a great addition too!
