Method
- Preheat oven to 400°C and line a baking tray with baking paper. Wash potatoes and slice into ⅛ inch slices. Add to a bowl along with oil, lime juice and zest, and salt. Toss thoroughly to evenly coat.
- Arrange potato slices on prepared baking tray and season with cracked pepper on both sides. Bake for 15-20 minutes or until golden brown and crispy.
Notes
Russet potatoes can be substituted with any kind of potato you like or have, even sweet potato!
