Sour Cream & Chives Twice Baked Potatoes

Ingredients
  

For the Spuds

  • 4 medium potatoes
  • 1 tbsp oil
  • salt & pepper to taste
  • 1 tbsp butter
  • ½ tsp onion powder
  • ¼ cup parmesan cheese

To Serve

  • ¼ cup sour cream
  • 1 tbsp fresh chives finely chopped

Instructions
 

  • Preheat oven to 200°C. Thoroughly wash potatoes and pierce with a fork in several places. drizzle with oil and season with salt and pepper. Place on a baking tray and bake for 45-50 minutes or until you can easily pierce the potatoes with a fork.
  • Carefully remove potatoes from oven and scoop out the insides, leaving a 1cm edge, and place in a small bowl.
  • Add butter and onion powder and season to taste with salt and pepper. Roughly mash with a fork until well incorporated.
  • Spoon mixture bake into potato skins and top with parmesan cheese. Return to the oven for 5-10 minutes or until cheese has melted.
  • Remove from oven and top with sour cream and chives.

Notes

Feel free to mix and match extra toppings as well...Crispy bacon bits are a great addition!
