Preheat oven to 400°C and line a baking tray with baking paper. Wash potatoes and slice into ⅛ inch slices. Add to a bowl along with oil, lime juice and zest, and salt. Toss thoroughly to evenly coat.
Arrange potato slices on prepared baking tray and season with cracked pepper on both sides. Bake for 15-20 minutes or until golden brown and crispy.
Notes
Russet potatoes can be substituted with any kind of potato you like or have, even sweet potato!
