Lime & Black Pepper Potato Chips

Ingredients
  

  • 2 medium russet potatoes (see notes)
  • 2 tbsp olive oil
  • 1 lime juice & zest
  • salt to taste
  • freshly cracked black pepper

Instructions
 

  • Preheat oven to 400°C and line a baking tray with baking paper. Wash potatoes and slice into ⅛ inch slices. Add to a bowl along with oil, lime juice and zest, and salt. Toss thoroughly to evenly coat.
  • Arrange potato slices on prepared baking tray and season with cracked pepper on both sides. Bake for 15-20 minutes or until golden brown and crispy.

Notes

Russet potatoes can be substituted with any kind of potato you like or have, even sweet potato!
