Homemade Lime & Black Pepper Potato Chips

If you’re looking for a healthy, but delicious version of store bought potato chips, then you’ve come to the right place! These baked chips are just as satisfying as the regular fried alternatives and are so easy and fun to make! These are a salty snack that you don’t have to feel guilty about!

Making your own potato chips is easier than you think, but if you have a mandolin slicer, it makes the process faster, but it’s not at all necessary. Leaving the skin on the potatoes makes them more nutritious and it also makes the process easier and faster, but it’s personal preference.

I developed this recipe on the spot one afternoon when a craving for something salty hit and there was basically nothing the pantry. Nothing. No chips, no crackers, nothing to cure my salty craving. So I had to get creative. Luckily, we had some limes in the crisper, so that helped me add some flavour to my spuds and to me, lime and black pepper are a match made in heaven! Thus, this recipe was born.

Homemade Lime & Black Pepper Potato Chips

Ingredients

2 x medium russet potatoes (see note)
2 Tbsp olive oil
Juice & zest of 1 lime
Freshly cracked black pepper
Salt, to taste

Directions

Preheat oven to 400’c and line a baking tray with baking paper. Wash potatoes and slice into 1/8 inch slices. Add to a bowl with oil, lime juice and zest, salt and pepper. Toss to combine. Arrange potato slices on baking tray and bake for 15-20 min or until golden and crispy. Enjoy!

Note: Russet potatoes can be changed for any type of potato you like or have, or you could even try sweet potato!
